Description:

Selection of plots around Ribeauvillé and Bergheim which are harvested in over-ripening with the development of noble rot. Selection obtained by successive sorting of grapes affected by noble rot, from plots harvested at over-ripeness several weeks after the end of the official harvest. The grapes are harvested exclusively by hand. Following controlled temperature fermentation, the wines matured on fine lees for 7 months Then are bottled and matured in our cellars. Deep, brilliant golden colour. Complex, concentrated notes of candied citrus, mineral notes. Very  aromatic, fresh acidity, persistent and balanced on the palate. Best served between 10 and 12°C. Pairs beautifully with Pan-fried foie gras, fruit mousse, lemon tart, bleu cheese, desserts. An excellent wine to enjoy today and for laying down, over 20 years.
